Description
|
Caraway is a biennial plant native to North America, Central Europe, Asia, and
the Middle East. It is also widely cultivated. The slender root stock, with its
white taproot, produce hollow stems that grow to 3 feet, producing fine, feathery
leaves. The
whole plant is pleasantly aromatic.
The white to creamy-white flowers bloom May through June,
then producing the flat dark-brown fruit.
Year one the plant forms a low russet of leaves growing
to about 1 foot, but in the second year the hollow, jagged branch stem grows from a white,
carrot shaped root, reaching 3 feet.

Growing Directions
|
Caraway grows easily from seeds planted in the spring. Sow seeds in late summer and
you will have fresh seeds the following season.
Plant 1/2 inch deep and 8 inches apart in rich, well-drained
soil and full sunlight. The plants need to be kept moist but not wet. Keep the bed free of weeds and
make sure to water during dry periods.
Caraway grows rapidly and is self propagating so watch were you
plant it. Do
not transplant once the plant is established.

|
History
|
Caraway has been found in Mesolithic excavations dating back 5000
years. During
the Middle Ages Caraway roots were boiled and eaten as a vegetable. The ancient Egyptians loved the
aromatic seed and in Elizabeth England a Caraway Seed Cake was a traditional present to farm
workers.
